You might not have access to a wide variety of fresh fruits and vegetables, and you might have a limited food budget, but that's no excuse for boring, unhealthy meals. The New York Times offers this recipe, and loads more, for cheap and nutritious dishes.

"I recently received an e-mail from a reader who cooks on an extreme budget in an area of the country where ingredients are limited.
