If you're in the market for cheap kitchen knives, expect anywhere from 11 to 20 pieces in a set. What you'll generally find in a cheap cutlery set is at least four steak knives and as many as eight, some variation of a chef's knife and/or a Santoku knife (somewhat like a small, narrow cleaver), a regular-size cleaver, a utility knife, a paring knife, a bread knife/slicer, and kitchen shears. The blades in a good cheap knife set are stainless steel and either stamped or forged, serrated or straight edged. Bonus extras include pieces such as a cheese knife, a boning knife, a sharpening tool, or a cutting board.
