The popular BBQ mega-chain Dickey’s Barbecue Pit took another leap into prominence in September, opening almost 30 ghost kitchens in the month alone. While they aren’t traditional locations like other Dickey’s restaurants, the fast-food barbecue joint will soon bring more Texas-style barbecue to many more people.

What Is a Ghost Kitchen?

Unlike a full-service restaurant, a ghost kitchen is just the kitchen part. Customers can’t dine in at a ghost kitchen, but the professional-grade kitchen prepares pickup and delivery orders as a takeout-only option. Also known as “digital” kitchens, most orders are placed online.

Why Is Dickey’s Opening Ghost Kitchens Instead of Standard Locations?

Fast food is trending toward takeout-only, and if a chain like Dickey’s doesn’t want to bleed money, it’s smart to cut some corners to avoid the additional overhead of a full-service restaurant. There’s no way this type of place can compete with mom-and-pop shops on flavor, so they need to push convenience.

Dickey’s currently operates 400 restaurants worldwide, with locations in every U.S. state except for Alaska, Arkansas, Connecticut, Indiana, Iowa, Maine, Maryland, Massachusetts, New Hampshire, South Dakota, and Vermont.
