Being that rhubarb resembles a ruby-colored stalk of celery, we’re not taken aback by the fact that it’s technically a vegetable, although it’s often culinarily treated like a fruit. These bright, tart stalks are one of the highlights of summer and while it’s been dubbed the “pie plant,” there are tons of ways to get creative with rhubarb. Rhubarb Crisp
