You may think of soup as just a wintery thing, or something to eat while staring out the window on a rainy day, but the year is long, and there’s so much soup to be had. I cannot come and arrest you for eating the wrong soups during the wrong season, for I am not the soup police. No matter how many applications I submit. That said, some soups are just better in the summer.

This might be the first thing you think of when it comes to summer soups, and there’s a reason for that. Gazpacho is refreshing as can be. You can do it a million ways, too. Below you’ll see a classic ‘spacho recipe, but don’t be afraid to dress it up in differentoutfits.

Summer Minestrone Soup

This is the easiest, most obvious, and least rule-bound soup here. Plus, vegetables are popping off in the summer; corn, tomatoes, squash, peppers, and more. You already know what to do. Grab whatever’s fresh and local, and go to town. If you need more guidance, here’s a great summer minestrone.

Shrimp and Corn Chowder

Summer corn is wonderful, and shrimp is wonderful year-round. It may not be cold, but with the right ingredients, you can feel refreshed from chowder all the same.

Zucchini Soup with Yogurt, Lemon, and Dill

Green stuff always tastes fresh, and that’s a fact. Zucchini, celery, and dill fill out the flavor profile of this nice summer soup, and the lemony yogurt brings it all together.

Chilled Tomato Peach Soup with Pistachio Basil Pistou

Like all of these soups (and all cooking, really), you want to make sure you have the freshest produce possible for this. Don’t be afraid of the word pistou; you just need a blender.

This is so cheap and easy. The more lemony, the more summery. That’s what I’ve always said, at least.

Korean Cucumber Soup

This is super easy to prepare, especially since you’re just combining some chopped ingredients with cold water. This is refreshing as can be, and also very much bridges the gap between soup and salad.
